Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Incorporate lard and any desired ingredients into the leftover bread dough, adding more flour as needed.

  2. Let the dough rise once, then mix down and let it rise again.

  3. Turn the dough out onto a floured surface, knead for a few minutes, then roll it out.

  4. Cut out biscuits using a biscuit cutter or mold them by hand.

  5. Place the biscuits in a well-greased baking pan.

  6. Before baking, wet the tops with warm water for a nice color.

  7. Bake in a preheated oven at 400°F (200°C) for 15 to 20 minutes.

  8. For glazing, brush the tops with a mixture of milk and sugar or a sweetened beaten egg yolk with a little milk, or simply use the beaten egg white.

  9. For a quicker bake, increase the oven temperature and bake for 8 minutes, watching closely to prevent burning.
