Angel Cake

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Preheat the oven to 350°F (175°C).

  2. Beat the egg whites in a bowl until they form a fine froth.

  3. Gradually add ½ cup of sifted powdered sugar, beating in 2 tablespoons at a time.

  4. Stir in the vanilla extract.

  5. Sift the cream of tartar with the flour, then sift the flour and remaining 1 cup of sugar together four times.

  6. Gently fold the flour mixture into the egg mixture until just combined.

Pan and bake

  1. Do not grease the pan; line it with clean manila paper.

  2. Pour the batter into an 8‑inch diameter, 3‑inch deep tube pan.

  3. Bake for 40 minutes without opening the oven for the first 15 minutes.

Cool and release

  1. When done, turn the pan upside down and let it stand for 1 hour.

  2. If the cake does not drop out easily, carefully loosen the edges with a knife.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into a foam that traps air, giving the cake its light, airy structure.
Powdered sugar
Sweetens the cake and helps stabilize the whipped egg white foam.
Flour
Sets during baking to form the cake's tender, open crumb structure.
Cream of tartar
Acidifies the egg whites, helping the foam hold its volume and resist collapse.

The step that matters

Fold the flour mixture gently. The batter's lightness comes from air trapped in the beaten egg whites. Vigorous stirring deflates that foam, leaving a dense cake, so fold only until just combined.

Swap the vanilla

How well each one fits the dish's main ingredients (egg, sugar, flour, cream):

  1. Raisinfits about as well
  2. Vanillathe original
  3. Figfits less well
  4. Strawberryfits less well

Fit is the average pairing score against egg, sugar, flour, cream. Candidates are from the same food group and used in at least 100 recipes.
