What each ingredient does

Blackberries
Supply the fruit, flavor and most of the liquid that forms the canned mixture.
Sugar
Sweetens the fruit and helps draw out juice while the mixture stands.

The step that matters

Dissolve the sugar before moving the kettle to the front of the stove. Letting the sugar dissolve while the mixture stands on the back of the stove, then heating gradually, lowers the risk of sugar scorching on the bottom of the kettle before the fruit is fully cooked.
