What each ingredient does

Eggs
Set by heat to bind the mixture so it holds its shape when cooled and cut.
Milk
Adds moisture and softness to the custard-like mixture before it is set.
Orange marmalade
Adds sweetness and citrus aroma to the set mixture.
Sifted sugar
Adds a light sweet finish on the fried fritters.

The step that matters

Cool the set mixture completely before cutting. Eggs set into a firm structure only as the mixture cools. Cutting it while warm can make the strips soft and misshapen, and they may break apart when dipped and fried.
