Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Provides the rich fat base that gives the ice cream its smooth, creamy texture.
Sugar
Sweetens the base and lowers the freezing point, keeping the ice cream softer and scoopable.
Shelled almonds
Supply the nutty flavour and, once made into a paste, body and texture.
Whipped cream
Adds air and lightness, making the finished ice cream smoother and less dense.

The step that matters

Adding the almond paste when the ice cream is half frozen. If the base is fully frozen, the paste will not blend evenly and will form hard flecks. Adding it while still partly liquid lets it disperse through the cream so the flavour and texture spread evenly.
