Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 400°F (200°C).

  2. Remove the top shell from the oysters, keeping them in the bottom shell.

  3. Season the oysters with butter, cayenne pepper, and lemon juice.

  4. Dredge fine bread crumbs in the shells, replace the oysters, and cover with more bread crumbs.

  5. Bake until lightly browned, then pour melted butter over each and dust with salt and cayenne.

  6. Serve on a plate with a quarter of lemon in the center.
