Filtered Coffee
Ingredients
Directions
Make a sack from fine flannel, longer than the coffee pot and slightly larger at the top.
Stitch the side seam, leaving an inch and a half open at the top.
Bend a piece of stiff wire into a circle and insert it into a hem at the top of the sack.
Fill the sack with coffee and lower it into the coffee pot, spreading the wire ends apart.
Turn the top of the sack down over the pot, covering the spout to retain aroma.
Pour boiling water over the coffee, close the lid tightly, and let it simmer for 15 to 30 minutes.
When serving, lift the sack off the spout but do not remove it from the pot.
