Watermelon Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix 3½ cups flour, 8 egg whites, 2 teaspoons cream of tartar, and 1 teaspoon baking soda dissolved in warm water.

  3. In another bowl, cream together 1 cup red sugar and ½ cup butter.

  4. Add ⅓ cup sweet milk, 2 cups flour, and 4 egg whites to the sugar and butter mixture.

  5. Add 1 teaspoon cream of tartar, ½ teaspoon baking soda, and ¾ cup raisins.

  6. Carefully layer the red batter around the tube of the pan and the white batter around the edge.

  7. It requires two people to fill the pan.
