What each ingredient does

Liver
Provides the main body and savory flavor of the sauce.
Butter
Carries the flavors and gives the sauce a rich, smooth texture.
Lemon
Adds acidity and bright citrus aroma to cut through the richness.

The step that matters

Heat gradually without boiling. Butter emulsions and delicate liver can separate, toughen or turn grainy if overheated. Gentle, gradual heat keeps the sauce smooth and the liver tender.
