What each ingredient does

Fillet of veal
Provides the meat and gelatin that give the gravy its body and rich flavor.
Onion
Adds savory sweetness and aromatic depth to the simmering liquid.

The step that matters

Reduce until a glaze forms. The veal must reduce slowly until its juices caramelize and stick to the pan, building deep browned flavor. Stopping too early leaves the gravy pale and thin, while burning it turns the flavor bitter.

Swap the onion

How well each one fits the dish's main ingredients (veal, pepper, carrot, clove):

  1. Capsicumfits better
  2. Parsnipfits better
  3. Turnipfits better
  4. Onionthe original

Fit is the average pairing score against veal, pepper, carrot, clove. Candidates are from the same food group and used in at least 100 recipes.
