Broiled Salmon

Ingredients

Directions

  1. Dry the salmon slices with a cloth and season with salt and pepper.

  2. Dredge the slices in sifted flour.

  3. Broil the slices on a gridiron rubbed with suet until cooked through.

  4. Alternatively, butter a sheet of white paper and place each slice on a separate piece.

  5. Envelope the salmon in the paper, twisting the ends, and broil gently over a clear fire.

  6. Serve with anchovy or caper sauce, adding chopped herbs and spice if desired.
