Baked White Fish

Ingredients

Directions

  1. Cut off the fish head if desired and remove the backbone, leaving two inches near the tail.

  2. In a pan, fry the chopped onion in 1 ounce of butter until soft.

  3. Mix the fried onion with the soaked bread, remaining butter, salt, pepper, and parsley or sage.

  4. Heat the mixture through, then stir in the beaten egg yolks.

  5. Stuff the fish with the mixture, sew it up with twine, and wrap it with white tape.

  6. Rub the outside of the fish with butter.

  7. Cover the bottom of a baking pan with hot water and place the fish in it, curved in an S shape.

  8. For the dressing, mash the hard-boiled egg yolks with salad oil, mustard, pepper, and vinegar to taste.
