Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Whole chicken
Provides the main protein, which cooks through during steaming.
All-purpose flour
Thickens the gravy into a smooth, pourable dressing.
Heavy cream
Adds richness and body to the dressing.
Chicken gravy
Forms the base of the dressing, supplying savory flavor and liquid.

The step that matters

Mixing the flour with cream before adding it to the gravy. Flour clumps if it hits hot liquid directly. Whisking it smooth with cream first lets it disperse evenly, so the dressing thickens without lumps.

Swap the nutmeg

The recipe marks nutmeg as optional. How well each one fits the dish's main ingredients (chicken, pepper, flour, cream):

  1. Turmericfits about as well
  2. Garlicfits about as well
  3. Nutmegthe original
  4. Tarragonfits about as well

Fit is the average pairing score against chicken, pepper, flour, cream. Candidates are from the same food group and used in at least 100 recipes.
