  2. Place the beef roll in the rendered fat and brown the beef roll on all sides.

  3. Add the water to the pot.

  4. If desired, add a finely chopped onion to the dressing before rolling.

Finish and serve

  1. Once cooked, remove the meat from the pot.

  2. Thicken the gravy.

  3. Pour the gravy over the beef.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Steak
Forms the outer wrap that becomes tender through slow stewing.
Bread crumbs
Absorb milk and butter to form a stiff dressing that holds the roll together.
Butter
Adds fat and richness to the dressing, carrying the herb flavour.
Salt pork
Renders fat for browning the roll and adds savoury flavour to the pot.

The step that matters

Brown the beef roll on all sides. Browning in the rendered pork fat builds deep savoury flavour and a seared surface. Skipping or rushing it leaves the gravy flat and pale.

Swap the summer savory

How well each one fits the dish's main ingredients (bread, pepper, butter, sage, milk, pork):

  1. Thymefits better
