Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Firm green peppers
Form the edible shell that holds the filling and gives the pickle its crisp bite.
Chopped cabbage
Adds bulk and a crunchy texture to the filling.
Chopped green tomatoes
Contribute tartness and moisture to the filling.
Vinegar
Acidifies the brine, preserving the peppers and giving them their sharp tang.
Brown sugar
Balances the vinegar's acidity with sweetness and adds depth of flavor.

The step that matters

Soaking the peppers overnight in salt water. Salt draws water out of the pepper walls through osmosis, firming them so they stay crisp rather than going soft during pickling.

Swap the tomato

How well each one fits the dish's main ingredients (pepper, cabbage, mustard, clove, vinegar, sugar):
