What each ingredient does

Cider vinegar
Provides the acidity that preserves the vegetables and gives the pickle its sharp flavour.
Mustard
Adds pungent flavour and a little body to the pickling liquid.
Sugar
Balances the sharpness of the vinegar with a touch of sweetness.

The step that matters

Draining the vegetables until dry. Any water left on the scalded vegetables dilutes the hot vinegar mixture, weakening its acidity and flavour and making the pickle less stable in the bottle.
