Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the cake

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix 1 cup sugar, 1 egg, 1 cup sweet milk, 2 cups flour, 1 tablespoon butter, and 2 heaping teaspoons baking powder until smooth.

  3. Divide the batter into three parts and pour into round shallow pans.

  4. Bake until golden brown.

Make the cream

  1. For the cream, beat 1 egg and ½ cup sugar together.

  2. Add ¼ cup flour and a little milk to the egg mixture.

  3. Stir the mixture into ½ pint of boiling milk until thick.

  4. Flavor the cream to taste and let it cool.

Assemble

  1. Spread the cream between the cooled cake layers.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and thicken the cream as they set with heat.
All-purpose flour
Provides the structure that holds the cake and thickens the cream.
Baking powder
Releases gas in the batter, making the cake rise and turn light.
Sugar
Sweetens the cake and cream and helps them brown.
Butter
Adds fat for tenderness and a richer flavor in the cake.
Milk
Supplies moisture to the batter and makes the cream thick and smooth.

The step that matters

Stirring the flour into the boiling milk. Flour thickens only when its starch is stirred in smoothly and heated; adding it lumpy or too quickly leaves clumps. Keep stirring so the cream thickens evenly without scorching on the bottom of the pan.
