Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Rinse the huckleberries in a basin of water and remove any floating debris.

  2. Pick out the stems and unripe berries, then place the cleaned berries in a dish.

  3. Preheat the oven to 400°F (200°C).

  4. Grease a pie dish with butter and line it with pie crust.

Assemble the pie

  1. Fill the crust with the huckleberries, making a layer about ½ inch deep.

  2. Sprinkle the brown sugar, flour, coarse sea salt, and grated nutmeg over the berries.

  3. Cover the pie with another crust, cutting a slit in the center or making small incisions on the sides.

  4. Press the edges of the crusts together and trim any excess with a sharp knife.

Bake

  1. Bake for 45 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Huckleberries
Provide the main fruit filling, supplying the pie's flavor and bulk.
Brown sugar
Adds sweetness and helps the filling taste rich and caramel-like.
Flour
Thickens the berry juices so the filling sets rather than running out.
Pie crust
Forms the structure that holds the filling and browns in the oven.

The step that matters

Trimming and sealing the edges. Pressing the top and bottom crusts together tightly keeps juices from leaking and burning on the oven floor. Vents let steam escape so the crust does not turn soggy or burst.

Swap the nutmeg

How well each one fits the dish's main ingredients (sugar, flour, butter):

  1. Cinnamonfits better
  2. Jalapenofits better
  3. Nutmegthe original
  4. Capersfits less well

Fit is the average pairing score against sugar, flour, butter. Candidates are from the same food group and used in at least 100 recipes.
