Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Beat the egg yolks with the sugar until smooth.

  3. Beat the egg whites until stiff peaks form.

  4. Gradually stir the egg whites into the yolk mixture.

  5. Boil and cool the milk, then mix it with the egg mixture.

  6. Add the salt and flavor with lemon or vanilla extract.

Assemble and bake

  1. Grease a baking dish with butter and pour in the custard mixture.

  2. Grate nutmeg over the top.

  3. Place the baking dish in a shallow pan filled with hot water.

  4. Bake for about 45 minutes, or until a teaspoon handle inserted comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Their proteins set when heated, turning the liquid mixture into a firm, sliceable custard.
Sugar
Sweetens the custard and slightly softens its set.
Whole milk
Provides the liquid and milk solids that give the custard its creamy body.

The step that matters

Bake in a water bath. Placing the dish in hot water surrounds it with gentle, even heat. Egg proteins set slowly this way, so the custard stays smooth instead of curdling or turning grainy at the edges.

Swap the nutmeg

How well each one fits the dish's main ingredients (egg, sugar, milk, butter):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Gingerfits less well
  4. Parsleyfits less well

Fit is the average pairing score against egg, sugar, milk, butter. Candidates are from the same food group and used in at least 100 recipes.
