Why it works: Vanilla and milk are a kitchen classic. They rank in the top 5% of all ingredient pairs, and cooks put them together in 19,187 recipes. Both carry ethyl caproate, which smells fruity, apple peel. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Gelatine
- Sets the whipped mixture so it holds its shape when unmolded.
- Egg whites
- Whipped into stiff peaks to give the meringue its light, airy structure.
- Egg yolks
- Thicken the custard as they cook, giving it a smooth, rich body.
- Milk
- Forms the base of the custard, adding richness and body.
- Sugar
- Sweetens both the meringue and the custard and helps stabilise the whipped egg whites.
The step that matters
Cook the custard over low heat until thickened. Egg yolks thicken through gentle heat. Too much heat can scramble them, leaving the custard grainy instead of smooth.
