What each ingredient does

Fruit juice
Provides the main flavor and the fruity liquid base of the ice cream.
Cream
Adds richness and fat, and whipping it gives the ice cream a light, airy body.
Sugar
Sweetens the juice and softens the texture of the frozen ice cream.

The step that matters

Whipping the cream. Cream must be whipped only until it thickens, so it holds air when combined with the juice. Over-whipping can turn it grainy or buttery, making the final texture dense and uneven.
