To Preserve Berries Whole.
Ingredients
Directions
Prepare the fruit
Buy fruit that is not too ripe and pick over immediately.
Wash the fruit if absolutely necessary and fill glass jars about two-thirds full.
Make the syrup
Combine 1 pound of sugar and 1 cup of water for every 2 pounds of fruit in a preserving kettle. Bring the mixture to a slow boil.
Pour the syrup into the jars over the berries, filling them to the brim.
Process and store
Place the jars in a pot of cold water on the stove. Bring the water to a boil until the fruit is scalding hot. Remove the jars.
Seal them tightly.
Store in a cool, dry place.

What each ingredient does
- Fruit
- Forms the body of the preserve and provides the flavor and texture of the finished berries.
- Sugar
- Sweetens the syrup and helps preserve the fruit by binding up water.
The step that matters
Filling the jars to the brim with hot syrup. Fruit must be fully covered with hot syrup and jars filled to the top so little air remains, which helps reduce spoilage and keeps the fruit from discoloring.
