Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Coffee-sugar
Provides the sweetness and body of the syrup.
Egg whites
Whipped proteins that add foam and a light, frothy texture.
Gum arabic
Stabilizes the mixture and keeps the foam from separating.
Bicarbonate of soda
Reacts with the tartaric acid to release carbon dioxide, making the drink fizz.
Tartaric acid
Reacts with the bicarbonate of soda to produce bubbles and adds tartness.

The step that matters

Combining the two mixtures at serving. The bicarbonate and tartaric acid react quickly once combined, so each mixture must be kept separate until serving to keep the fizz active.
