What each ingredient does

Milk
Its proteins curdle with the acid, clarifying the punch into a smooth, mellow drink.
Lemons
Their juice provides the acidity that balances the sugar and curdles the milk.
Loaf sugar
Adds sweetness that balances the acidity and the alcohol.
Brandy or rum
Carries the lemon rind's aromatic oils and gives the punch its spirit base.

The step that matters

Adding the boiling milk. Hot milk meeting the acidic lemon mixture curdles its proteins, which the jelly bag then filters out. Adding it too cold or too slowly leaves the punch cloudy rather than clear.
