Corn-meal Gruel

Ingredients

Directions

Make the gruel

  1. Mix the fine Indian meal with cold water and the salt until smooth.

  2. Add the boiling water and cook for 20 minutes, stirring frequently.

  3. If the gruel becomes too thick, add more boiling water to thin it.

Finish and serve

  1. For a richer flavor, stir in the cream if desired.

  2. For sick persons, let it settle, pour off the top, and serve plain.

  3. For convalescents, toast the bread, add it to the gruel, and stir in the cream, ginger, and sugar.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fine indian meal
Cornmeal thickens the water into a smooth, porridge-like gruel as it cooks.
Boiling water
Hot water swells the cornmeal starch, gelatinizing it so the gruel thickens.
Cream
Adds fat, giving the gruel a richer flavor and softer mouthfeel.

The step that matters

Stir frequently while the gruel cooks. Cornmeal settles and can scorch on the bottom of the pan. Frequent stirring keeps the starch evenly dispersed, giving a smooth texture rather than lumps or a burnt taste.

Swap the ginger

How well each one fits the dish's main ingredients (cream, bread, sugar):

  1. Nutmegfits better
  2. Cinnamonfits better
  3. Celeryfits about as well
  4. Gingerthe original

Fit is the average pairing score against cream, bread, sugar. Candidates are from the same food group and used in at least 100 recipes.
