What each ingredient does

Strawberries
Provide the fruit, which softens and holds its shape in the syrup as it cooks.
Sugar
Sweetens the fruit and draws out juice, helping form a syrup that preserves the berries.

The step that matters

Ensuring the wash boiler water is milk-warm before boiling. Jars placed in water that is too hot or too cold can crack from sudden temperature change. Starting warm and heating gradually reduces thermal shock to the glass.
