Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Thickens the sauce as it boils, giving it body.
Sugar
Provides sweetness that balances the sharpness of the vinegar.
Vinegar
Adds acidity that gives the sauce its tangy flavour.
Butter
Adds richness and a smooth finish to the sauce.

The step that matters

Stirring in the butter just before removing from heat. Butter added at the end stays fresh-tasting and emulsifies into the sauce; if it boils for long, its flavour dulls and the fat can separate, leaving the sauce greasy.

Swap the nutmeg

How well each one fits the dish's main ingredients (sugar, flour, vinegar, butter):

  1. Cinnamonfits better
  2. Jalapenofits better
  3. Tarragonfits about as well
  4. Nutmegthe original

Fit is the average pairing score against sugar, flour, vinegar, butter. Candidates are from the same food group and used in at least 100 recipes.
