What each ingredient does

Turnips
Give the soup its body and mild, slightly sweet vegetable flavour as they soften.
Carrots
Add natural sweetness and colour, and thicken the broth as they break down.
Onions
Build savoury depth through gentle frying, which brings out their sweetness.
Butter
Carries flavour and helps the vegetables fry gently and brown lightly at the start.
Leeks
Add a mild onion-like aroma and softness to the broth.
Celery
Adds savoury, herbal aroma that rounds out the broth.

The step that matters

Skimming off the scum during the simmer. Impurities and foam rise to the surface as the soup simmers. Removing them keeps the broth clear and clean-tasting rather than murky or bitter.

Swap the clove

How well each one fits the dish's main ingredients (turnip, carrot, onion, butter, celery, leek, garlic):

  1. Parsleyfits better
  2. Thymefits better
  3. Capersfits better
  4. Clovethe original
