Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and give the dumplings structure as they set in the liquid.
Wheat flour
Forms the starch and gluten network that gives the batter body and holds the dumpling shape.
Sour milk
Its acidity reacts with baking soda to produce gas that helps the dumplings rise.
Sour cream
Adds fat and richness, giving the dumplings a tender, moist crumb.
Baking soda
Reacts with the acid in the sour milk to release carbon dioxide, leavening the dumplings.

The step that matters

Boil for 20 minutes or until no raw dough is visible on the outside. Dumplings dropped into liquid must cook through; the starch needs sustained heat to set, so pulling them early leaves a dense, doughy centre.
