Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Mix bread crumbs, salt, pepper, butter, parsley, and beaten egg yolk.

  3. Stuff the shad with the mixture and sew it up or tie it with string.

Bake

  1. Pour water and butter over the fish.

  2. Bake for 1 to 1¼ hours.

Make the dressing and serve

  1. For the dressing, boil the gravy from the baking dish.

  2. Add ketchup, brown flour mixed with cold water, lemon juice, and sherry or Madeira wine.

  3. Serve the dressing in a sauce boat.
