What each ingredient does

Sturgeon
Is the main protein that is soaked, marinated, coated and fried.
Vinegar
Acidic marinade liquid that softens the fish and adds tang.
Eggs
Bind the bread crumbs to the fish and enrich the sauce with yolks.
Bread crumbs
Form a crisp, golden coating when the fish is fried.
Melted butter
Adds fat and richness to the marinade and carries flavor.

The step that matters

Drying the sturgeon before breading. Surface moisture left after the marinade keeps the egg and bread crumbs from adhering evenly and makes the coating steam instead of brown and crisp in the hot fat.

Swap the mustard
