Veal Patties

Why it works: Pepper and celery match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 16,012 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Veal Patties

Ingredients

Directions

Make the stew

  1. Combine veal and salt pork in a pot. Stew gently for 10–15 minutes.

  2. Season with salt, pepper, celery, and yellow top.

  3. Mix flour, egg yolk, and milk in a bowl to form a thin batter.

  4. Add the batter to the pot and bring to a boil.

Assemble and serve

  1. Roll out the pie crust and cut into rounds the size of a small sauce plate.

  2. Cut halfway through the center of each round to create a cover.

  3. Place a spoonful of the stew in each crust, cover with the top, and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Lean meat that turns tender during gentle stewing and forms the body of the filling.
Salt pork
Renders fat that adds richness and savory flavor to the stew.
Flour
Thickens the batter and, once it boils into the pot, the stew itself.
Egg yolk
Thickens and enriches the batter, adding richness and a softer set.
Milk
Adds liquid that loosens the flour into a smooth, creamy batter.
Pie crust
Pastry shell that holds the stew and forms the edges of each patty.

The step that matters

Add the batter to the pot and bring to a boil. Flour thickened with egg yolk and milk can clump or curdle if added unevenly or overheated. Stirring the batter in gradually and keeping the heat moderate helps it blend smoothly into the stew.

Swap the celery

How well each one fits the dish's main ingredients (veal, pork, pepper, flour, egg, milk):

  1. Nutmegfits better
  2. Sagefits better
  3. Marjoramfits better
  4. Celerythe original

Fit is the average pairing score against veal, pork, pepper, flour, egg, milk. Candidates are from the same food group and used in at least 100 recipes.
