  2. Shape the mixture into small balls or croquettes.

Coat and fry

  1. Roll croquettes in cracker crumbs, then in beaten eggs, and again in cracker crumbs.

  2. Fry in hot fat until golden brown, then drain on brown paper.

What each ingredient does

Sweetbreads
Provide the main body of the croquettes, chopped to a paste that binds the filling.
Eggs
Bind the mixture and coat the croquettes so they hold together and brown when fried.
Cream
Adds moisture and richness so the chopped filling stays tender rather than dry.
Butter
Adds fat and flavour to the filling and helps it stay soft and rich.
Cracker crumbs
Thicken the mixture to a stiff consistency and form a crisp, browned outer crust.

The step that matters

Fry in hot fat until golden brown. The coated croquettes must go into hot fat so the crumb crust sets and browns quickly. If the fat is not hot enough, the coating absorbs grease and the filling can break apart.

Swap the onion

How well each one fits the dish's main ingredients (veal, vinegar, pepper, egg, butter, cream):

  1. Capsicumfits better
