Mushroom Sauce

Ingredients

Directions

Prepare

  1. Select mushrooms that are dull pearl colored with pale pink undersides.

  2. Wash the mushrooms and remove the stems and outer skins.

  3. For enhanced flavor, salt a few mushrooms the night before to extract their juice.

Make the sauce

  1. Stew the mushrooms slowly in veal gravy, milk, or cream with the onion.

  2. Season with salt, pepper, and butter rolled in flour.

  3. If a poisonous mushroom is present, the onion will turn black; discard the sauce.

What each ingredient does

Butter
Adds richness and fat, and with flour helps thicken the sauce.
All-purpose flour
Thickens the sauce when rolled into the butter and stirred in.
Button mushrooms
Provide the main flavor and body of the sauce as they release their juices.
Onion
Adds aromatic savory flavor to the stewed sauce.
Veal gravy, milk, or cream
Forms the liquid base that carries and softens the mushrooms into a sauce.

The step that matters

Stew the mushrooms slowly. Slow stewing lets mushrooms release their moisture and soften gently, while high heat can toughen them and scorch the dairy or gravy base.

Swap the onion

How well each one fits the dish's main ingredients (mushroom, veal, pepper, butter, flour):

  1. Shallotfits better
