What each ingredient does

Cabbage
Forms the bulk of the pickle and gives it a crisp, firm texture after salting.
Vinegar
Provides the acidity that preserves the cabbage and gives the pickle its sharp taste.
Brown sugar
Adds sweetness that balances the sharpness of the vinegar.
Onions
Contribute savoury flavour and aroma to the cooking liquid.
Turmeric
Gives the pickle its yellow colour and a mild earthy flavour.

The step that matters

Squeeze the salted cabbage well. Salt draws water out of the cabbage overnight. Removing that excess liquid keeps the vinegar brine at full strength and stops the pickle from tasting watery or diluted.
