Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Hard-boiled eggs
Form the main body of the pickle, absorbing the vinegar and spices as they sit.
Vinegar
Acidifies the eggs and carries the spice flavours into them during pickling.
Mustard seeds
Add sharp, pungent flavour that deepens as the pickle matures.

Swap the ginger

The recipe marks ginger as optional. How well each one fits the dish's main ingredients (egg, vinegar, white pepper, allspice, mustard, garlic, horseradish):

  1. Tarragonfits better
  2. Capersfits better
  3. Dillfits better
  4. Gingerthe original

Fit is the average pairing score against egg, vinegar, white pepper, allspice, mustard, garlic, horseradish. Candidates are from the same food group and used in at least 100 recipes.
