Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the custard and add richness as they cook with the sugar.
Gelatin
Sets the cream so it holds its shape when chilled in the mold.
Sweet cream
Provides the rich body and fat that give the dessert its smooth texture.
Whipped cold cream
Adds air and lightness, keeping the dessert soft and fluffy.
Sugar
Sweetens the custard and helps thicken the egg yolks as they cook.

The step that matters

Stir the dissolved gelatin into the boiling hot cream. Gelatin must be fully dissolved and evenly distributed before the mixture cools; lumps or uneven setting leave a grainy or patchy texture once chilled.
