Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Gelatine
- Sets the liquid into a firm, sliceable body as it cools.
- Egg whites
- Whipped and folded in, they add airy lightness to the set dessert.
- Grated chocolate
- Provides the chocolate flavour and colour of the dessert.
- Sugar
- Adds sweetness and balances the richness of the milk and chocolate.
- Milk
- Forms the creamy base that the gelatine sets in.
The step that matters
Beat in the whipped egg whites. The mixture must be cool but not yet set when the whites are folded in. If it is too hot, the whites lose their foam; if it has already set, they will not blend evenly, leaving a lumpy texture.
“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
