Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salt mackerel
Is the main fish, softened by soaking and gentle cooking to remove excess salt.
Butter
Adds richness and a smooth, rounded flavour to the fish and sauce.
Milk
Forms the base of the sauce, giving it body and a mild, creamy flavour.
Corn-starch
Thickens the milk into a smooth sauce as it heats.
Egg
Enriches the sauce and adds body when gently heated with it.

The step that matters

Return the mixture to the heat. Once the beaten egg is added, the sauce must be heated gently and stirred. Too much heat can scramble the egg and leave the sauce grainy rather than smooth.

Swap the parsley

How well each one fits the dish's main ingredients (butter, milk, corn, pepper, egg, lemon):

  1. Parsleythe original
  2. Nutmegfits about as well
  3. Tarragonfits about as well
  4. Cinnamonfits less well

Fit is the average pairing score against butter, milk, corn, pepper, egg, lemon. Candidates are from the same food group and used in at least 100 recipes.
