Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Codfish
Forms the main body of the dish, cooking to a firm, flaky steak.
Salt fat pork
Rendered fat provides the frying medium and adds savory flavor to the steaks.
Cornmeal
Coats the steaks so they brown into a crisp, golden crust when fried.

The step that matters

Frying the steaks in smoking-hot pork fat. If the fat is not hot enough, the cornmeal coating absorbs oil and turns greasy instead of forming a crisp, browned crust. Fully hot fat seals the coating quickly and sears the fish.

Swap the lemon
