Chicken Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the chicken

  1. Prepare the chicken as for fricassee and stew until tender.

  2. Remove the largest bones and scrape the meat from the neck and backbone.

Assemble the pie

  1. Line a 4 to 6 quart pudding dish with biscuit dough, about ¼ inch thick.

  2. Layer part of the chicken in the dish, adding butter, salt, and pepper as needed.

  3. Add sliced boiled eggs and the remaining chicken, seasoning again.

  4. If using, add new potatoes.

  5. Pour enough gravy over the mixture to fill the dish.

  6. Cover with a ¼ inch thick crust, making a hole in the center the size of a teacup.

Bake and serve

  1. Brush the top with beaten egg white and bake at 400°F (200°C) for 30 to 45 minutes.

  2. Garnish with small celery leaves arranged in a circle.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main body of the filling, becoming tender through slow stewing.
Eggs
Sliced boiled eggs add firm, mild texture and body to the filling.
Biscuit dough
Forms the rich, flaky crust that holds the filling and browns in the oven.
Gravy
Adds moisture and savory flavor, filling the spaces between the layers.
Butter
Adds richness and fat, enhancing flavor and mouthfeel of the chicken layers.

The step that matters

Cover with a ¼ inch thick crust, making a hole in the center the size of a teacup.. The vent lets steam escape while baking, so the filling does not build pressure and make the crust soggy or lift it unevenly.

Swap the potato

The recipe marks potato as optional. How well each one fits the dish's main ingredients (chicken, pepper, butter, egg, biscuit):

  1. Asparagusfits about as well
  2. Spinachfits about as well
  3. Capsicumfits about as well
  4. Potatothe original

Fit is the average pairing score against chicken, pepper, butter, egg, biscuit. Candidates are from the same food group and used in at least 100 recipes.
