Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
Form the main body of the croquettes, giving a soft, finely textured filling.
Cracker crumbs
Absorb moisture and bind the mixture so it holds its shape, then form a crisp coating.
Eggs
Bind the mixture and create a coating that sets and browns when fried.
Cream
Adds moisture and richness, keeping the filling tender rather than dry.
Butter
Adds fat for richness and smooth texture in the filling.

The step that matters

Add just enough cracker crumbs to form a stiff mixture. Crumbs absorb liquid from the cream, eggs and chopped sweetbreads. If the mixture stays wet it will not hold its shape and may break apart in the hot oil.

Swap the onion

How well each one fits the dish's main ingredients (veal, vinegar, pepper, egg, butter, cream, lemon):

  1. Capsicumfits better
  2. Asparagusfits better
  3. Spinachfits better
  4. Onionthe original

Fit is the average pairing score against veal, vinegar, pepper, egg, butter, cream, lemon. Candidates are from the same food group and used in at least 100 recipes.
