What each ingredient does

Cabbage
Forms the bulk of the pickle; salting softens it and draws out water so it can take up the vinegar.
Vinegar
Provides the acidity that preserves and sharpens the pickle.
Brown sugar
Adds sweetness that balances the sharp vinegar.
Onions
Add savory flavor and body to the pickle as they cook down in the vinegar.
Turmeric
Gives the pickle its yellow color and an earthy aroma.

The step that matters

Salting the cabbage overnight. Salt draws water out of the cabbage through osmosis, leaving it crisp and less watery so it absorbs the vinegar evenly instead of diluting the brine.
