What each ingredient does

Cucumbers
Form the bulk of the pickle; salting and drying firm their texture and remove water.
Vinegar
Provides acidity that sharpens flavour and helps preserve the pickle.
Horseradish (in the method)
Adds sharp, pungent heat that carries through the cucumbers.
Garlic
Contributes pungent aroma that infuses the cucumbers over time.
Turmeric
Gives the pickling liquid its yellow colour and a mild earthy flavour.

The step that matters

Salting and sun-drying the cucumbers. Salting for 24 hours and then drying the cucumbers draws out water, so the pickle stays firm and crisp. With less water in the cucumbers, the vinegar brine can penetrate without being diluted.

Swap the ginger
