What each ingredient does

Eggs
Main ingredient that becomes firm-textured and absorbs the vinegar flavour as it steeps.
Vinegar
Provides the acidity that preserves and sharpens the pickled flavour.
Mustard seeds
Add pungent, sharp heat and aroma as the seeds infuse the vinegar.
Horseradish
Contributes a sharp, pungent bite that mellows during pickling.

The step that matters

Seal and rest the jar for 8 to 10 days. Pickling depends on the acidic vinegar slowly penetrating the eggs and blending flavours; opening the jar too early leaves the eggs under-flavoured and the whites less seasoned throughout.

Swap the clove

The recipe marks clove as optional. How well each one fits the dish's main ingredients (egg, vinegar, white pepper, allspice, ginger, mustard, garlic):

  1. Tarragonfits about as well
  2. Turmericfits about as well
  3. Clovethe original
  4. Thymefits about as well

Fit is the average pairing score against egg, vinegar, white pepper, allspice, ginger, mustard, garlic. Candidates are from the same food group and used in at least 100 recipes.
