Scalloped Tomatoes

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Assemble

  1. Butter the sides and bottom of a pudding dish.

  2. Add a layer of bread crumbs to the bottom.

  3. Layer sliced tomatoes on top, then sprinkle with coarse sea salt, black pepper, butter bits, and a little white sugar.

  4. Repeat the layers until the dish is full, finishing with a top layer of sliced tomatoes and butter bits.

Bake and brown

  1. Bake covered at 350°F (175°C) until cooked through, then remove the cover and brown quickly.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Absorb tomato juices and give the layers a soft, starchy body.
Sliced tomatoes
Provide the main moisture and acidity, which softens and releases juice as they bake.
Butter
Adds fat and richness and helps the top brown.
White sugar
Balances the tomatoes' acidity with a touch of sweetness.

The step that matters

Removing the cover to brown. Baking covered traps steam so the tomatoes cook through without drying out. Uncovering at the end lets surface moisture evaporate, so the top browns quickly rather than stewing.

Swap the tomato

How well each one fits the dish's main ingredients (butter, bread, pepper, sugar):

  1. Capsicumfits better
  2. Potatofits about as well
  3. Sweet potatofits about as well
  4. Tomatothe original

Fit is the average pairing score against butter, bread, pepper, sugar. Candidates are from the same food group and used in at least 100 recipes.
