Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggplants
Form the soft interior of each slice, absorbing moisture and softening as they cook.
Egg
Acts as a binder that helps the bread crumbs stick to the slices.
Bread crumbs
Form a crisp coating that browns in the hot fat.
Butter
Provides fat for frying, promoting browning and adding rich flavor.

The step that matters

Heat the butter until hot before frying. Hot fat sets the crumb coating quickly, so it crisps rather than soaking up oil. Cold or underheated butter lets the coating absorb grease and turn soggy and heavy.
