Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass or gelatine
Sets the pineapple mixture into a firm, sliceable structure once chilled.
Heavy cream
Whipped, it adds lightness and a creamy texture to the set filling.
Pineapple
Provides the main fruit flavor and, once stewed and sieved, the body of the filling.
Fine white sugar
Sweetens the filling and helps balance the tartness of the pineapple.

The step that matters

Stir until it begins to set. Chilling on ice must be watched closely. If the mixture sets fully before the cream is folded in, it becomes lumpy and loses volume. If it is still too liquid, the cream will deflate and the filling will not hold its shape in the mold.

Swap the pineapple

How well each one fits the dish's main ingredients (sugar, cream):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits better
  4. Pineapplethe original

Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
