What each ingredient does
- Shin of beef
- Provides meat flavour and gelatin from connective tissue that gives the stock body.
- Marrow bone (in the method)
- Adds fat and rich flavour to the stock as it simmers slowly.
- Carrot
- Adds sweetness and aromatic flavour to the stock.
- Onion
- Adds savoury depth and aromatic sweetness as it cooks down.
- Celery
- Adds aromatic, savoury flavour to the stock.
The step that matters
Keep the simmer below boiling point. Gentle heat lets collagen slowly break down into gelatin while keeping the stock clear. Boiling churns the fat and particles into the liquid, making it cloudy and greasy.
Swap the onion
How well each one fits the dish's main ingredients (beef, marjoram, parsley, carrot, clove, turnip, thyme):
