  1. Place the beef, veal, and chicken in a soup kettle.

  2. Add 6 quarts of cold water and bring to a slow boil.

  7. Skim off the fat and remove the meat.

What each ingredient does

Lean beef
Releases gelatin and flavor into the water, giving the stock its body and savory taste.
Breast of veal
Adds collagen and mild meaty flavor, contributing to a fuller, silkier stock.
Chicken
Adds collagen and savory depth to the broth as it simmers.
Celery
Contributes aromatic, herbal flavor to the stock during the final boil.
Carrots
Add natural sweetness and aroma to the finished stock.

The step that matters

Skim off any scum that rises to the surface. Scum forms as proteins and impurities coagulate when the water heats. Removing it early keeps the stock clear and prevents a bitter, cloudy broth.

Swap the turnip

How well each one fits the dish's main ingredients (beef, veal, chicken, celery, carrot, onion, pepper):

  1. Potatofits better
  2. Tomatofits better
  3. Capsicumfits better
  4. Turnipthe original

Fit is the average pairing score against beef, veal, chicken, celery, carrot, onion, pepper. Candidates are from the same food group and used in at least 100 recipes.
